Not very many choices. Raise the ceiling, or lower the floor. However, what about only raising the ceiling in one room? Or two? Pick the ones that are most important, and the ones you spend time in the most. It will, trust me, make the 7'-9" ceilings livable in the rest of the house.

Thanks for your reply, Richard. I guess I didn't make my ideas clear since after I re-read it, it certainly sounded like I wanted the whole roof raised! Silly me! What I want is the living room/dining room combo and our master bedroom raised - just in the center like a cathedral ceiling. We have a 14' height restriction because of the views in our neighborhood so even if I could afford to rebuild the dang thing I couldn't go higher than that! Can't even put a second story on my house since we're the last one before it drops off down to waterfront (bought the worst house in the best neighborhood we could afford -- total fixer-upper with lots and lots to do -- hasn't been touched since it was built in '64, but these ceilings are just crazy low!) Now if I can just talk Hubby into it....I know he can do it (and so does he, he just doesn't want to!) Thanks again, Richard!
