I just removed the popcorn from my ceilings and thought about using the paint with sand/texture on the ceilings. Is it a good practice to use that on ceilings?

as with popcorn ceilings the sand finish is also not used to much anymore.
I suggest that you repair any damage on ceilings and paint with smooth finish. That is the method most folks choose nowadays.
If you do use a sand finish, to make it look good takes a lot of work to make even.
