Without seeing your house and its roof, there's not much one can say, but anything you can say in words can be done...it's just a matter of dollars. Another alternative would be to use the attic space between the ceilings and the roof to create vaulted ceilings, at least in some rooms. There are structural issues to deal with, but they are relatively simple...primarily, you'd have to be sure the ratrers are properly tied to keep them from sagging and deflecting the walls outward.
